Zaxby’s Restaurant to open in May at in former KFC North Third St. site

Wednesday, Jan 14, 2015, 5 p.m. — Kim Huston, president of the Nelson County Economic Development Agency, announced Wednesday that a new Zaxby’s Restaurant is locating in Bardstown and will open for business in May.
The new restaurant will renovate the former KFC location at 816 North Third St., just north of the Conway-Heaton car dealership.
Matt Hatfield and his father Kent are business partners in the restaurant venture. The new Bardstown restaurant will be Matt Hatfield’s second Zaxby’s.
The new 3,300-square-foot restaurant will seat 76 and feature Zaxby’s unique decor accented by custom, vintage prints and local school memorabilia.
Zaxby’s menu includes chicken fingers, wings, sandwiches, salads and is a pioneer of the “quick-casual” restaurant format that offers service and amenities between fast food and a sit-down type restaurant. At the new location, customers will place orders at the counter and are called to pick them up when they are ready. Drive-thru service will also be available.
Zaxby’s currently operates more than 660 locations in 16 states.
